Ingredients
Mud Bars
½ cup butter
½ cup unsweetened almond or hemp milk
⅓ cup cocoa powder
1 large egg
½ teaspoon vanilla extract
1 cup almond flour
½ cup Swerve Brown
½ teaspoon baking soda
2 cups chopped keto marshmallows (about ½ batch)
⅓ cup chopped toasted pecans
Chocolate Frosting
6 tablespoons butter
6 tablespoons heavy whipping cream
¼ cup cocoa powder
½ teaspoon vanilla extract
½ cup powdered Swerve Sweetener
Instructions
Mud Bars
Preheat the oven to 325°F and grease a 9×9 square metal baking pan.
In a large saucepan over medium heat, combine the butter, almond milk, and cocoa powder, whisking frequently until the butter melts and the cocoa is well incorporated.
Remove from heat and whisk in the egg and vanilla, then stir in the almond flour, sweetener, and baking soda.
Spread the batter in the prepared pan and bake for 25 to 30 minutes, until just set. Remove and let cool for about 10 minutes, then sprinkle with the chopped marshmallows and toasted pecans.
Chocolate Frosting
In a medium saucepan over medium heat, combine the butter, whipping cream, and cocoa powder. Bring to a boil and cook for 1 minute, whisking frequently to prevent boiling over.
Remove from heat and whisk in the vanilla extract and sweetener until smooth. Pour over the bars.
Refrigerate for 1 to 2 hours to set the chocolate before cutting into bars.
