Ingredients:

  • 1 lb boneless, skinless chicken thighs or breasts, thinly sliced
  • 1/3 cup cornstarch (for coating)
  • 3 tablespoons vegetable oil (for frying)
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/3 cup brown sugar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon fresh ginger, grated
  • 1/4 cup water
  • 2 green onions, chopped (for garnish)

Directions:

  1. Coat the chicken: Toss the sliced chicken in cornstarch until fully coated. Shake off excess.
  2. Fry the chicken: Heat oil in a large skillet over medium-high heat. Fry the chicken pieces until golden brown and crispy, then set aside on paper towels.
  3. Prepare the sauce: In the same skillet, combine soy sauce, brown sugar, garlic, ginger, and water. Simmer for 2-3 minutes until slightly thickened.
  4. Combine: Add the fried chicken back to the skillet and toss to coat evenly in the sauce. Let it cook for another 2 minutes to absorb the flavors.
  5. Serve: Garnish with chopped green onions and serve hot over steamed rice.

Note: For a spicier kick, add a pinch of red pepper flakes to the sauce!
