Turkey Meatballs with Zoodles

This healthy and delicious recipe combines juicy turkey meatballs with low-carb zucchini noodles (“zoodles”). Packed with protein and flavor, this dish is a perfect choice for a wholesome, guilt-free dinner that’s quick and easy to prepare!

Ingredients:

  • 1 lb ground turkey
  • 1/4 cup almond flour or breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 3 medium zucchini, spiralized
  • 1/2 cup marinara sauce (low-sugar)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Directions:

  1. Prepare Meatballs: In a bowl, mix ground turkey, almond flour, egg, garlic powder, onion powder, salt, and pepper. Roll into 12-16 meatballs.
  2. Cook Meatballs: Heat olive oil in a skillet over medium heat. Sear the meatballs until browned and fully cooked (8-10 minutes).
  3. Cook Zoodles: In the same skillet, sauté zucchini noodles with a sprinkle of Italian seasoning for 3-4 minutes.
  4. Combine and Serve: Add marinara sauce to the skillet and toss the meatballs and zoodles in the sauce until warm.
  5. Garnish: Plate the dish, garnish with fresh herbs and a lemon wedge, and enjoy!

Note

For extra flavor, sprinkle grated Parmesan cheese on top, or swap marinara for a creamy garlic sauce for variety. 😊
