Ingredients:
- 1 lb (450g) ground beef or turkey
- 1 medium zucchini, diced
- 1 medium bell pepper, diced
- 1 cup cauliflower rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (no sugar added)
- 1 cup beef or chicken broth (low-sodium)
- 1 tbsp olive oil
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Directions:
- Heat olive oil in a large pot over medium heat. Add the ground beef or turkey, breaking it up with a spoon, and cook until browned. Remove excess fat if necessary.
- Add the onion and garlic to the pot and sauté until fragrant, about 2 minutes.
- Stir in the diced zucchini, bell pepper, and cauliflower rice. Cook for 3-4 minutes until slightly softened.
- Add the diced tomatoes, broth, and seasonings (chili powder, smoked paprika, cumin, salt, and pepper). Stir well and bring to a simmer.
- Cover and simmer for 20 minutes, stirring occasionally. Adjust seasonings to taste before serving.
Note:
For extra heat, add a pinch of cayenne pepper. Garnish with avocado, shredded cheese, or sour cream for added flavor.
