Ingredients:

  • 6 large eggs, hard-boiled and peeled
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp apple cider vinegar or lemon juice
  • Salt and black pepper, to taste
  • ¼ tsp paprika (plus more for garnish)
  • 1 tbsp chopped chives or parsley (optional)

Directions:

  1. Boil the Eggs: Place eggs in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer for 10 minutes, then transfer eggs to an ice bath for easy peeling.
  2. Prepare the Filling: Cut each egg in half lengthwise and carefully scoop out the yolks into a bowl. Mash the yolks with a fork until smooth.
  3. Mix the Filling: Add mayonnaise, Dijon mustard, vinegar, salt, and pepper to the yolks. Mix until smooth and creamy.
  4. Garnish and Serve: Sprinkle with paprika and top with chopped chives or parsley for extra flavor. Serve immediately or chill before serving.
