Ingredients:

  • 1 cup quinoa, rinsed
  • 2 chicken breasts, cooked and shredded
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped

Directions:

  1. Cook quinoa according to package instructions and set aside to cool.
  2. In a large bowl, combine shredded chicken, cucumber, tomatoes, and red onion.
  3. Add cooked quinoa to the bowl, followed by olive oil, lemon juice, oregano, salt, and pepper. Mix thoroughly.
  4. Garnish with fresh parsley and serve chilled or at room temperature.

Note:
For a variation, you can add feta cheese or swap the chicken for grilled tofu for a vegetarian option.
