Ingredients:
- 6-8 chicken drumsticks
- 1 lb baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt & black pepper (to taste)
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp unsalted butter, melted
- Fresh parsley for garnish
Directions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season the chicken by tossing drumsticks with olive oil, garlic, paprika, oregano, salt, and pepper. Place them on one side of the baking sheet.
- Prepare the potatoes by coating them with olive oil, salt, and a bit of parmesan. Spread them on the other side of the baking sheet.
- Bake for 35-40 minutes, flipping the drumsticks and stirring the potatoes halfway through, until the chicken is golden and reaches an internal temperature of 165°F (75°C).
- Finish with flavor: Drizzle melted butter over the dish, sprinkle with the remaining parmesan and red pepper flakes, and garnish with fresh parsley before serving.
