Ingredients
- 1 lb beef stew meat, cut into small cubes
- 3 tablespoons olive oil, divided
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 garlic cloves, minced
- 8 cups beef broth
- 1 cup pearl barley
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste

Instructions
Brown the Beef
- Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
- Add the beef cubes and season with salt and pepper.
- Cook until the beef is browned on all sides, about 5-7 minutes.
- Transfer the beef to a plate and set aside.
Sauté the Vegetables
- In the same pot, add the remaining tablespoon of olive oil.
