Ingredients

  • 4 salmon fillets (about 6 oz each

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 6 cups mixed salad greens (arugula, spinach, romaine)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1 avocado, sliced

  • 1/4 red onion, thinly sliced

  • Juice of 1 lemon

Directions
