Ingredients

  • 4 large bell peppers (any color), tops cut off and seeds removed

  • 2 cups fresh spinach, chopped

  • 1 cup mushrooms, diced

  • 1/2 cup shredded mozzarella or cheddar cheese

  • 1/2 cup cooked quinoa or rice

  • 1 small onion, diced

  • 2 tbsp olive oil

  • Salt and pepper to taste

Directions

  • Preheat the oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add the onions and mushrooms, sautéing for 5-7 minutes until softened.

    Spinach & Mushroom Stuffed Bell Peppers

  • Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and mix in the cooked quinoa or rice. Season with salt and pepper to taste.

  • Stuff the bell peppers with the spinach and mushroom mixture and top each with a sprinkle of cheese.
