12 oz pasta (penne, fettuccine, or your choice)

1 cup mushrooms, sliced

2 cups fresh spinach

1/2 cup heavy cream (or dairy-free alternative)

2 tablespoons olive oil

Directions

Cook the pasta according to package instructions, drain, and set aside.
