Ingredients

  • 4 large bell peppers (any color)

  • 1 lb ground turkey

  • 2 cups fresh spinach, chopped

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1/2 cup cooked quinoa or rice (optional)

  • Salt and pepper to taste

  • Olive oil for cooking

Directions

  • Preheat the oven to 375°F (190°C) and prepare a baking dish. Cut the tops off the bell peppers and remove the seeds and membranes.
