Ingredients

4 large bell peppers, halved and seeded

2 cups fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese

1 small onion, finely diced

1 clove garlic, minced

1 tbsp olive oil

Salt and pepper to taste
Directions

Preheat the oven to 375°F (190°C). Arrange the halved bell peppers on a baking dish.

Heat olive oil in a pan over medium heat. Sauté the onion and garlic for 2-3 minutes until soft, then add the spinach and cook until wilted.

In a bowl, mix the sautéed spinach, feta, cream cheese, salt, and pepper until well combined.
