1 can chickpeas, drained and rinsed

1 bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

2 tbsp olive oil

2 cloves garlic, minced

1 tbsp soy sauce

1 tbsp sriracha or hot sauce

1 tbsp lime juice

Salt and pepper to taste

Cooked rice or quinoa for serving
Directions

Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant.

Add the chickpeas, bell pepper, broccoli, and carrot to the skillet. Stir-fry for 8-10 minutes until the vegetables are tender but still crisp.
