Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 can (14 oz) coconut milk

1 tbsp curry powder

1 garlic clove, minced

1 tbsp olive oil

1 bell pepper, sliced

1 cup spinach

2 cups cooked rice

Salt and pepper to taste

Directions

Heat olive oil in a large pan over medium heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove from the pan and set aside.
