These vegan Thai peanut noodles are a perfect combination of creamy, spicy, and savory flavors. Loaded with colorful veggies and coated in a rich peanut sauce, this dish is both comforting and packed with fresh, bold flavors. Ingredients

  • 8 oz rice noodles

  • 1/4 cup peanut butter, 2 tbsp soy sauce, 1 tbsp sriracha

  • 1 bell pepper, 1 carrot (julienned), 2 green onions (sliced)

  • Crushed peanuts, red chili slices, and cilantro for garnish

  • Lime wedges for serving

Directions

  • Cook Noodles: Boil rice noodles according to package instructions, drain, and set aside.

  • Prepare Sauce: In a bowl, whisk together peanut butter, soy sauce, sriracha, and a little warm water until smooth.
