This Chicken Fried Rice is savory, satisfying, and packed with flavor—better than any takeout! With tender chicken, fresh veggies, and perfectly seasoned rice, it’s a quick and easy meal you can whip up in under 30 minutes. Ideal for weeknights or meal prep, this dish combines convenience and deliciousness in every bite.

Ingredients

  • 2 cups cooked jasmine rice (day-old rice works best)
  • 2 tbsp vegetable oil
  • 1 lb (450g) chicken breast, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas and carrots mix
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Directions

  • Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-7 minutes until golden and cooked through. Remove from the skillet and set aside.

    Chicken Fried Rice

  • In the same skillet, add the remaining oil and sauté the garlic for 30 seconds until fragrant. Add the peas and carrots and stir-fry for 2-3 minutes.
  • Push the veggies to the side and pour the beaten eggs into the skillet. Scramble them until cooked through, then mix with the veggies.
  • Add the cooked rice and chicken back into the skillet. Pour in soy sauce and sesame oil, stirring everything together for 2-3 minutes until the rice is heated through.
