Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 1 bell pepper, chopped

  • 2 zucchini, sliced

  • 1 cup black beans (rinsed and drained)

  • 2 tbsp taco seasoning

  • 1 cup shredded cheddar cheese

  • Optional: Fresh cilantro and salsa for garnish

Directions

  • Heat olive oil in a skillet over medium heat and sauté onions and bell peppers until soft.

  • Add zucchini slices and cook for another 5 minutes, stirring occasionally.
