This Slow Cooker BBQ Pulled Chicken is the perfect set-it-and-forget-it meal. Juicy, flavorful, and coated in smoky-sweet BBQ sauce, it’s ideal for busy days when you want a satisfying, low-carb dinner. Serve it in lettuce wraps, on keto buns, or even over cauliflower rice for a healthy, crowd-pleasing dish.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 cup sugar-free BBQ sauce
- 1/2 cup chicken broth
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- Salt and pepper to taste
Directions
- Prepare the Chicken: Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.
- Add to the Slow Cooker: Place the chicken breasts in the slow cooker. Add chicken broth, apple cider vinegar, and BBQ sauce on top.
- Cook: Set the slow cooker on low for 6-8 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.
- Shred the Chicken: Use two forks to pull the chicken apart inside the slow cooker, mixing it with the sauce.
- Serve and Enjoy: Serve in lettuce wraps, keto buns, or over cauliflower rice for a complete meal
Note:
- For an extra kick, add a dash of hot sauce or a sprinkle of red pepper flakes before serving!
