Beef Birria is a slow-cooked Mexican dish bursting with bold, savory flavors. Traditionally made with dried chiles, aromatic spices, and succulent beef, this dish is perfect for tacos, quesadillas, or simply enjoyed with consommé on the side. Whether for a cozy dinner or a weekend gathering, birria never fails to impress.

Ingredients

  • 2 lbs beef chuck or short ribs

  • 3 dried guajillo chiles, 2 ancho chiles

  • 4 garlic cloves, minced

  • 1 large onion, chopped

  • 2 cups beef broth

  • 1 tsp cumin, 1 tsp oregano

  • Salt and pepper to taste

Directions

  • Toast the dried chiles in a skillet for 1-2 minutes until fragrant. Soak them in hot water for 10 minutes, then blend with garlic, onion, and spices into a smooth paste.

  • In a large pot, sear the beef until browned on all sides. Add the chile paste and beef broth, stirring to combine.
