Ingredients:

  • 2 boneless, skinless chicken breasts, cubed
  • 2 tbsp cornstarch (or almond flour for low-carb)
  • ½ tsp garlic powder, ½ tsp salt, ½ tsp black pepper
  • 1 egg, beaten
  • 1 tbsp sesame seeds, chopped green onions for garnish

For the Sauce:

  • 2 tbsp soy sauce (or coconut aminos)
  • 1 tbsp honey (or sugar-free alternative)
  • 1 tbsp rice vinegar
  • ½ tsp sriracha (optional for spice)
  • 1 tsp sesame oil
  • ½ tsp minced garlic

Directions:

  1. Coat the chicken: Toss cubed chicken in cornstarch, garlic powder, salt, and pepper. Dip in beaten egg, then coat again lightly.
  2. Air-fry to crispy perfection: Place chicken in a single layer in the air fryer basket. Spray with oil and cook at 380°F (190°C) for 10-12 minutes, shaking halfway.
  3. Make the sauce: In a pan, heat soy sauce, honey, rice vinegar, sriracha, sesame oil, and garlic until slightly thickened.
  4. Toss & coat: Add crispy chicken to the pan, tossing to coat evenly in the sauce. Sprinkle sesame seeds and green onions on top.
  5. Serve & enjoy: Pair with steamed veggies, cauliflower rice, or a light salad for a balanced meal.

Note:

For extra crunch, air-fry for an additional 2 minutes! You can also swap honey with a sugar-free alternative for a diabetic-friendly version.
