2 slices of whole-grain or sourdough bread, toasted

1 ripe avocado

2 eggs

1 tbsp white vinegar (for poaching)

Directions

Toast the bread until golden and crispy. While the bread is toasting, mash the avocado in a bowl with a pinch of salt and pepper.
