Ingredients

  • 2 slices of whole-grain or sourdough bread, toasted

  • 1 ripe avocado

  • 2 eggs

  • 1 tbsp white vinegar (for poaching)

  • Salt and pepper to taste

  • Red pepper flakes or herbs for garnish (optional)

Directions

  • Toast the bread until golden and crispy. While the bread is toasting, mash the avocado in a bowl with a pinch of salt and pepper.
