Ingredients:

  • 4 boneless, skinless chicken breasts
  • ½ cup low-sodium soy sauce (or coconut aminos for low-carb option)

  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch (or arrowroot powder for gluten-free option)
  • 1 tbsp water (to mix with cornstarch)
  • 1 tbsp sesame seeds & sliced green onions (for garnish)


Directions:

1️⃣ Prepare the Teriyaki Sauce: In a small saucepan, mix soy sauce, honey, sesame oil, garlic, ginger, and rice vinegar. Simmer on low heat for 3-4 minutes.

2️⃣ Thicken the Sauce: In a separate bowl, mix cornstarch and water to create a slurry. Stir it into the saucepan and cook for 1-2 minutes until the sauce thickens.

3️⃣ Marinate the Chicken: Place chicken breasts in a baking dish and brush with the teriyaki sauce, reserving some for later. Let it marinate for at least 15 minutes (or overnight for extra flavor).

4️⃣ Bake to Perfection: Preheat oven to 375°F (190°C). Bake the chicken for 20-25 minutes, basting with extra sauce halfway through.

5️⃣ Garnish & Serve: Remove from oven, let it rest for 5 minutes, then slice. Sprinkle with sesame seeds & green onions, and serve over cauliflower rice or steamed veggies!
