- 4 large bell peppers (any color)
- 1 lb ground turkey
- 1 cup fresh spinach, chopped
- 1/2 cup low-fat shredded mozzarella cheese
- 1/2 cup diced tomatoes
- 2 garlic cloves, minced
- 1 tsp olive oil
- Salt and pepper to taste
Directions:
- Prepare Bell Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers, remove seeds, and set aside.
