Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground turkey
  • 1 cup fresh spinach, chopped
  • 1/2 cup low-fat shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • Salt and pepper to taste

Directions:

  1. Prepare Bell Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers, remove seeds, and set aside. 
  2. Cook Turkey: Heat olive oil in a pan over medium heat. Add garlic and cook until fragrant. Add ground turkey and cook until browned.
  3. Add Vegetables: Stir in spinach, diced tomatoes, salt, and pepper. Cook for 3-4 minutes until spinach wilts.
  4. Stuff Peppers: Spoon the turkey mixture into the bell peppers. Top each with shredded mozzarella cheese.
  5. Bake and Serve: Place stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes or until the peppers are tender. Serve hot and enjoy!
