This Chicken Fried Rice is the perfect quick-fix meal that tastes better than your favorite takeout! With tender chicken, fluffy rice, and a medley of veggies all stir-fried in a savory sauce, this dish is ready in just 20 minutes. Ingredients
- 2 cups cooked and cooled rice
- 1 lb chicken breast, diced
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 2 garlic cloves, minced
- Optional: Sliced green onions and sesame seeds for garnish
Directions
- Cook the chicken: Heat 1 tbsp sesame oil in a large pan over medium heat. Add diced chicken, season with a pinch of salt, and cook until browned and cooked through, about 5-7 minutes. Set aside.
- Scramble the eggs: In the same pan, add a little more oil if needed and pour in the beaten eggs. Scramble them until cooked, then set aside with the chicken.
- Sauté the veggies and garlic: Add the remaining oil to the pan. Toss in the mixed vegetables and garlic, cooking for 2-3 minutes until tender.
- Combine and season: Add the cooked rice, chicken, and eggs back to the pan. Drizzle with soy sauce and stir everything together, cooking for 2-3 minutes until heated through.
