1 cup whole wheat flour (or all-purpose)

1/2 cup brown sugar or coconut sugar

1 teaspoon baking powder

1/4 teaspoon salt

2 eggs

1/2 cup unsweetened applesauce

1/2 cup milk (or plant-based milk)

1 cup fresh blueberries
Directions

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together oats, flour, sugar, baking powder, baking soda, cinnamon, and salt.

In another bowl, whisk the eggs, applesauce, and milk until combined. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
