Buffalo Chicken Sloppy Joes
Ingredients:
- 1 cup chopped carrots
- 2 tablespoons oil (vegetable or olive oil)
- 1 pound ground chicken
- 3 teaspoons onion powder
- 1 teaspoon black pepper
- 1 tablespoon minced garlic
- 1/2 to 3/4 cup buffalo sauce
- 1/2 cup chicken broth
- 2 tablespoons cornstarch
- 4-5 hamburger buns
- Ranch dressing (for topping)
Instructions:
- Prepare the Vegetables:
- Chop carrots until you have one cup. If you have an onion, you can chop and add that too.
- Sauté the Carrots:
- Heat a pan over medium-high heat and add 2 tablespoons of oil.
- Add the chopped carrots to the pan and sauté for 5-8 minutes, or until they are slightly browned.
- Cook the Chicken:
- Add the ground chicken to the pan with the carrots.
- Cook until the chicken is fully done, which should take around 10 minutes or less.
- Season the Mixture:
- Add 3 teaspoons of onion powder and 1 teaspoon of black pepper to the pan.
- Stir well to combine.
- Add Garlic:
- Add 1 tablespoon of minced garlic to the pan.
- Cook until the garlic is fragrant, about 1 minute.
- Incorporate the Buffalo Sauce:
- Add 1/2 to 3/4 cup of buffalo sauce to the pan.
- Stir to combine.
- Add Chicken Broth:
- Pour in 1/2 cup of chicken broth.
- Stir the mixture well.
- Thicken the Sauce:
- Add 2 tablespoons of cornstarch to the pan.
- Stir until the mixture thickens. Once thickened, remove the pan from heat and set aside.
- Prepare the Buns:
- Toast 4-5 hamburger buns until they are golden brown.
- Assemble the Sloppy Joes:
- Fill each toasted bun with the buffalo chicken mixture.
- Top with ranch dressing.
