These Chicken Finger Mozzarella Sticks are the ultimate crispy, cheesy, and keto-friendly snack! Made with almond flour or crushed pork rinds, they are a high-protein, gluten-free alternative to traditional breaded mozzarella sticks. Perfect for game nights, appetizers, or a quick snack!

 Ingredients:

  • 8 mozzarella cheese sticks, cut in half
  • 1 lb ground chicken (or chicken tenders)
  • 1 egg, beaten
  • ½ cup almond flour or crushed pork rinds
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt & ½ tsp black pepper
  • Olive oil or cooking spray

 Directions:

1️⃣ Prepare the Coating: In a bowl, mix almond flour (or pork rinds), parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.


2️⃣ Wrap the Mozzarella: Flatten a small portion of ground chicken and wrap it around each mozzarella stick, fully covering it.
3️⃣ Coat & Freeze: Dip each chicken-wrapped stick in beaten egg, then roll in the seasoned coating. Place on a tray and freeze for 15-20 minutes to prevent cheese leakage.
4️⃣ Cook Until Crispy: Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway, OR bake at 425°F (218°C) for 15-18 minutes until golden brown.


5️⃣ Serve & Enjoy: Let cool slightly, then serve with low-carb marinara sauce or ranch dressing!
