Ingredients:

  • 2 boneless, skinless chicken breasts (sliced into strips)
  • 8 oz penne pasta (or whole wheat for a healthier option)
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil or butter
  • ½ cup heavy cream (or Greek yogurt for a lighter option)
  • 1 cup low-sodium chicken broth
  • ½ cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • ½ cup cherry tomatoes, halved
  • ½ tsp paprika + ½ tsp black pepper
  • Fresh parsley for garnish

Directions:

1️⃣ Cook the pasta according to package instructions, then drain and set aside.
2️⃣ Season the chicken with Cajun seasoning and paprika. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown and fully cooked (~5-7 minutes). Remove and set aside.
