Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces

  • 1 can (14 oz) coconut milk

  • 1 tbsp curry powder

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • 1 bell pepper, sliced

  • 1 cup spinach

  • 2 cups cooked rice

  • Salt and pepper to taste

  • Fresh cilantro for garnish

  • Heat olive oil in a large pan over medium heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove from the pan and set aside.
