Ingredients
- 1 cup Arborio rice
- 2 cups mushrooms, sliced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup Parmesan cheese (optional)
- 1/2 cup dry white wine (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley (for garnish)
Directions
- Heat olive oil in a large pan over medium heat. Sauté the onion and garlic until soft.
- Add the sliced mushrooms and cook until golden brown. Remove a few mushrooms for garnish if desired.
- Stir in the Arborio rice and cook for 2 minutes until lightly toasted.
