Ingredients

  • 4 large bell peppers, halved and seeded

  • 2 cups fresh spinach, chopped

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup cream cheese

  • 1 small onion, finely diced

  • 1 clove garlic, minced

  • 1 tbsp olive oil

  • Salt and pepper to taste

Directions

  • Preheat the oven to 375°F (190°C). Arrange the halved bell peppers on a baking dish.

  • Heat olive oil in a pan over medium heat. Sauté the onion and garlic for 2-3 minutes until soft, then add the spinach and cook until wilted.
