Introduction

This Creamy Tuscan Salmon is a luxurious, restaurant-quality dish made in just 30 minutes! Juicy, pan-seared salmon fillets are bathed in a rich garlic parmesan cream sauce with fresh spinach and cherry tomatoes. It’s low-carb, keto-friendly, and packed with protein, making it perfect for a comforting yet healthy meal!

Ingredients:

  • 4 salmon fillets (6 oz each, skinless or with skin)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt & black pepper to taste

Directions:

1️⃣ Sear the Salmon:

  • Season salmon fillets with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the salmon for 3-4 minutes per side until golden brown. Remove and set aside.

2️⃣ Sauté the Aromatics:

  • In the same pan, melt butter and sauté garlic and cherry tomatoes for 2 minutes until soft.

3️⃣ Make the Creamy Sauce:

  • Pour in chicken broth and heavy cream, stirring to combine.
  • Add Parmesan cheese, red pepper flakes (if using), and spinach. Simmer until the sauce thickens.

4️⃣ Combine Everything:

  • Return the salmon fillets to the pan and spoon sauce over them.
  • Let simmer for 3-5 minutes until salmon is fully cooked.

5️⃣ Serve & Enjoy!

  • Garnish with extra Parmesan cheese and fresh basil.
  • Serve with zucchini noodles, mashed cauliflower, or over pasta for a full meal!


Note:

For a dairy-free version, substitute coconut cream and nutritional yeast instead of heavy cream and Parmesan.
