Ingredients:
- 1 package of Biscoff cookies
- 1 cup strong brewed coffee, cooled
- 2 tbsp rum (optional)
- 1 ½ cups mascarpone cheese
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Cocoa powder for dusting
Directions:
- In a shallow dish, combine the cooled coffee and rum. Dip the Biscoff cookies into the coffee mixture, one at a time, and layer them in the bottom of a 9×9-inch dish.
- In a separate bowl, whip the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until thick and smooth.
- Spread half of the mascarpone mixture over the cookie layer. Repeat the process with another layer of soaked cookies and top with the remaining mascarpone mixture.
