These Easy Homemade Kievs are a low-carb, lean and green twist on the classic dish. Juicy chicken breast filled with a delicious herb-infused butter that melts perfectly when sliced, this meal is satisfying and perfect for those who want a flavorful, protein-packed dinner without the extra carbs.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup unsalted butter, softened
- 2 tbsp chopped fresh parsley
- 1 clove garlic, minced
- Salt and pepper to taste
Directions
- Preheat the oven to 400°F (200°C). Mix the softened butter with parsley, minced garlic, salt, and pepper, then refrigerate until firm.
- Butterfly the chicken breasts and place a spoonful of the herbed butter in the center of each. Fold the chicken to enclose the butter and secure with toothpicks.
- Heat a skillet over medium-high heat and sear the stuffed chicken on both sides until golden brown.
- Transfer the chicken to a baking dish and bake for 15-20 minutes or until cooked through.
- Let rest for a few minutes before serving. Enjoy with a side of greens or steamed vegetables.

Note:
- For a lighter version, use an air fryer to cook the chicken for a crispy finish with less oil.
