Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- 4 medium potatoes (quartered)
- 4 garlic cloves (minced)
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp dried thyme (or rosemary)
- Salt and pepper to taste
Directions:
- Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear skin-side down until golden brown (about 5 minutes). Flip and cook for another 5 minutes. Set aside.
- In the same skillet, add the potatoes and cook until lightly browned. Push to one side of the skillet.
