Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 4 medium potatoes (quartered)
  • 4 garlic cloves (minced)
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme (or rosemary)
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear skin-side down until golden brown (about 5 minutes). Flip and cook for another 5 minutes. Set aside.
  2. In the same skillet, add the potatoes and cook until lightly browned. Push to one side of the skillet.
  3. Reduce heat to medium and add butter, garlic, and thyme. Stir until fragrant, then nestle the chicken back into the skillet with the potatoes.
  4. Cover and cook for 20 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F and potatoes are tender.
  5. Serve hot, garnished with fresh herbs if desired.

For an extra kick, sprinkle a pinch of chili flakes into the garlic butter sauce!
