This Ground Beef and Sweet Potato Hash is a hearty, flavorful meal that’s perfect for breakfast, lunch, or dinner. The sweetness of the potatoes balances the savory beef, creating a filling, nutrient-rich dish that’s simple yet satisfying. It’s a great option for meal prep or a quick, one-pan meal.
Ingredients
- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 onion, diced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Directions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 10 minutes, stirring occasionally until tender.
- In the same skillet, push the sweet potatoes to the side and add another tbsp of olive oil. Brown the ground beef, breaking it apart as it cooks, about 8 minutes.
- Add the diced onion and garlic to the skillet, cooking for another 5 minutes until softened and fragrant. Season with smoked paprika, salt, and pepper.
- Stir everything together, cooking for another 2-3 minutes until well combined and heated through.
- Garnish with fresh parsley and serve hot, optionally topped with a fried egg.
