Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 onion, diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • Heat 1 tbsp olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 10 minutes, stirring occasionally until tender.

  • You can add bell peppers or spinach for extra veggies or swap ground beef with ground turkey for a leaner option.
