This Halloumi Burger Delight is a mouthwatering alternative to traditional beef burgers. Packed with rich, salty halloumi cheese and fresh, wholesome toppings, it’s a quick, vegetarian-friendly dish perfect for weeknights or casual gatherings.

Ingredients:

  • 2 blocks halloumi cheese (sliced into 8 patties)
  • 4 brioche buns (toasted)
  • 1 large tomato (sliced)
  • 4 lettuce leaves
  • 1 red onion (caramelized)
  • 4 tbsp plain yogurt (or hummus)
  • 1 tbsp olive oil
  • Optional: chili flakes or smoked paprika for extra spice

Directions:

  1. Heat olive oil in a skillet over medium heat. Add halloumi slices and grill until golden brown on both sides, about 2-3 minutes per side.
  2. Toast the brioche buns lightly in the same skillet for added flavor.
  3. Assemble the burger: Spread yogurt or hummus on the bottom bun, add a lettuce leaf, tomato slice, and caramelized onion.
  4. Top with two slices of grilled halloumi, and close with the top bun.
  5. Serve immediately with a side of sweet potato fries or a light salad.

Note:
For a vegan twist, swap halloumi with a firm tofu marinated in lemon juice and spices!
