Ingredients
- 6 large eggs
- 1/2 cup low-fat cottage cheese
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/2 cup diced vegetables (e.g., spinach, bell peppers, mushrooms)
- 1/4 cup cooked and diced turkey bacon or chicken sausage
- Salt and pepper to taste
Directions
- Preheat the oven to 350°F (175°C) and lightly grease a muffin tin or use silicone liners.
