Ingredients

  • 6 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 cup diced vegetables (e.g., spinach, bell peppers, mushrooms)
  • 1/4 cup cooked and diced turkey bacon or chicken sausage
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin or use silicone liners.
  2. In a blender, combine the eggs, cottage cheese, and a pinch of salt and pepper. Blend until smooth.
  3. Divide the diced vegetables and protein evenly into the muffin tin cups.
  4. Pour the egg mixture into each cup, filling about 3/4 full, and sprinkle with shredded cheese on top.
  5. Bake for 12–15 minutes, or until the egg bites are set and slightly golden. Let cool for a few minutes before serving.

Note:
Feel free to swap the vegetables or protein for your favorites. Store in an airtight container in the fridge for up to 4 days and reheat in the microwave for a quick grab-and-go meal.
