Ingredients
- 4 salmon fillets
- 1 cup quinoa
- 2 cups vegetable broth or water
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, sliced and juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Directions
- Cook the quinoa in vegetable broth or water according to package instructions, then set aside.
- Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet, drizzle with olive oil, and season with minced garlic, lemon juice, salt, and pepper.
- Top each fillet with lemon slices and bake for 12-15 minutes, until the salmon is flaky and cooked through.
