Lemon Strawberry Pen
Ingredients:
- 3 cups of milk
- 1 cup of condensed milk
- 1/2 cup of powdered milk
- 1/2 cup of cream cheese
- 1/4 cup of lemon juice (seedless)
- 1 tablespoon of lemon zest
- 1/4 cup of vanilla cookies
- Crushed vanilla cookies (to taste, for decoration)
Instructions:
- Prepare the Milk Mixture:
- In a pot, heat the milk, condensed milk, and powdered milk together. Stir constantly until the mixture comes to a boil. Remove from heat and let it cool slightly.
- Blend the Ingredients:
- In a blender, combine the slightly cooled milk mixture with the cream cheese, lemon juice, lemon zest, and 1/4 cup of vanilla cookies. Blend until smooth and well combined.
- Assemble the Pens:
- Pour about 3 tablespoons of crushed vanilla cookies into the bottom of each plastic bag or mold.
- Fill each bag or mold with the lemon mixture up to 3/4 of its capacity.
- Freeze:
- Place the filled bags or molds in the freezer and let them freeze until the mixture solidifies completely.
- Serve:
- Once frozen, serve the lemon strawberry pens well chilled. Decorate with additional crushed vanilla cookies if desired.
