Low-Carb Chili with Extra Veggies and Ground Beef or Turkey

Ingredients:

  • 1 lb (450g) ground beef or turkey
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 cup cauliflower rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (no sugar added)
  • 1 cup beef or chicken broth (low-sodium)
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the ground beef or turkey, breaking it up with a spoon, and cook until browned. Remove excess fat if necessary.
  2. Add the onion and garlic to the pot and sauté until fragrant, about 2 minutes.
  3. Stir in the diced zucchini, bell pepper, and cauliflower rice. Cook for 3-4 minutes until slightly softened.
  4. Add the diced tomatoes, broth, and seasonings (chili powder, smoked paprika, cumin, salt, and pepper). Stir well and bring to a simmer.
  5. Cover and simmer for 20 minutes, stirring occasionally. Adjust seasonings to taste before serving.

Note:

For extra heat, add a pinch of cayenne pepper. Garnish with avocado, shredded cheese, or sour cream for added flavor.
