4 large bell peppers, tops cut off and seeds removed

1 cup cooked quinoa

1/2 cup diced tomatoes

1/4 cup chopped Kalamata olives

1/4 cup crumbled feta cheese

1 tbsp olive oil, plus extra for brushing
Directions

Preheat the oven to 375°F (190°C). Brush the bell peppers with olive oil and place them in a baking dish.

In a bowl, mix together the quinoa, diced tomatoes, olives, feta cheese, and 1 tbsp olive oil.

Stuff each bell pepper with the quinoa mixture, packing it tightly.
