Ingredients
- 2 tbsp olive oil
- 1 lb (450g) chicken breasts, cut into bite-sized pieces
- 4 garlic cloves, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz (225g) penne or your favorite pasta
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions
- Heat olive oil in a large skillet over medium heat. Add the chicken, season with salt and pepper, and cook until golden and cooked through (5-7 minutes). Remove and set aside.
- In the same skillet, add the garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, and bring to a simmer. Add the pasta, stirring occasionally, and cook for 10-12 minutes until the pasta is tender.
- Return the chicken to the skillet and stir in the Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens and coats the pasta.
- Garnish with parsley and extra Parmesan before serving. Enjoy your creamy, flavorful one-pan meal

Note:
- For a lighter version, substitute heavy cream with half-and-half, and use whole-wheat pasta for added fiber.
