4 large bell peppers, tops removed and seeds scooped out

1 cup cooked quinoa

1 can (15 oz) black beans, drained and rinsed

1 cup diced tomatoes

1 small onion, diced

1 tablespoon olive oil

1 teaspoon cumin

½ cup shredded cheese (optional)

Salt and pepper to taste
Directions

Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil and sauté the onions until softened. Add diced tomatoes, black beans, quinoa, cumin, salt, and pepper. Cook for 5 minutes.
