Ingredients:
For the Filling:
- 1 lb ground chicken
- 4 large bell peppers (any color)
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup shredded cheese (optional, for topping)
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Directions:
- Prepare the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the insides with olive oil and place them upright in a baking dish.
- Cook the Filling: Heat olive oil in a skillet over medium heat. Add the onion and garlic, cooking until softened. Stir in the ground chicken and cook until no longer pink. Add diced tomatoes, smoked paprika, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
- Stuff the Peppers: Spoon the cooked chicken mixture into the prepared peppers, filling them generously. If desired, sprinkle shredded cheese on top of each pepper.
- Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve: Garnish with fresh herbs and serve warm with a side salad or cauliflower rice for a complete meal.
