Ingredients:

  • 4 salmon fillets, skin removed, cut into chunks
  • 1 tbsp green curry paste
  • 1 can (400ml) coconut milk
  • 1 cup mixed vegetables (e.g., bell peppers, snap peas, zucchini)
  • 1 tbsp fish sauce (optional)
  • Juice of 1 lime
  • Fresh basil or cilantro for garnish

Directions:

  1. Prepare the Base: In a skillet or wok, heat a tablespoon of oil over medium heat. Sauté the green curry paste until fragrant (1-2 minutes).
  2. Add Coconut Milk: Stir in the coconut milk and bring to a simmer. Add the fish sauce and lime juice for depth of flavor.
  3. Cook the Vegetables: Toss in the mixed vegetables and simmer for 5-7 minutes until tender.
  4. Add Salmon: Gently place the salmon chunks into the curry and cook for 5-7 minutes, or until the salmon is cooked through.
  5. Finish & Serve: Garnish with fresh basil or cilantro and serve hot over steamed jasmine rice or noodles.

Note:

For extra heat, add sliced red chilies or chili flakes. Substitute salmon with tofu or shrimp for a different protein option!
