  • 1 lb salmon fillet, skinless

  • 1 sheet puff pastry, thawed

  • 1 cup fresh spinach, chopped

  • 1/2 cup mushrooms, finely diced

  • Prepare the Filling: Sauté mushrooms in a pan until soft, then add spinach. Cook until wilted, then mix in cream cheese, salt, and pepper. Let cool.

  • Assemble the Wellington: Roll out the puff pastry on a floured surface. Spread the spinach-mushroom filling in the center, then place the salmon fillet on top, seasoning it lightly.
