These salted pistachio meringues are light as air, with a delicate crunch and a perfect balance of sweetness and saltiness. Ingredients

  • 4 large egg whites

  • 1 cup granulated sugar

  • 1/4 tsp cream of tartar

  • 1/2 cup crushed salted pistachios

  • Pinch of salt

Directions

  • Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.

  • In a clean bowl, beat the egg whites with a pinch of salt until frothy. Add the cream of tartar and gradually add sugar, beating until stiff peaks form.
