These Sourdough Discard Tortillas are a simple, zero-waste solution to repurposing leftover sourdough starter. They are soft, flavorful, and perfect for wraps, tacos, or quesadillas. With just a few ingredients, you can transform your discard into delicious homemade tortillas.

Ingredients

  • 1 cup sourdough discard (unfed)

  • 1 ½ cups all-purpose flour

  • 2 tbsp olive oil

  • ½ tsp salt

  • ½ cup warm water (adjust as needed)

Directions

  • To keep tortillas soft, cover them with a damp cloth after cooking. If dough feels too sticky, add a little more flour.

      

  • Mix Dough: In a bowl, combine sourdough discard, flour, olive oil, and salt. Gradually add warm water, mixing until a soft dough forms.

  • Rest & Roll: Cover the dough with a damp cloth and let it rest for 15 minutes. Divide into 8 balls and roll each into a thin circle.

  • Cook Tortillas: Heat a non-stick skillet over medium heat. Cook each tortilla for 1-2 minutes on each side, until bubbles form and golden spots appear.

  • Cool & Serve: Transfer cooked tortillas to a towel to keep warm. Serve immediately or store in an airtight container.

Note:)
